Ms. Toni’s Yeast-Free Cabbage Soup

If you’ve ever walked through the doors of Hotze Health & Wellness Center, you have experienced the prime hospitality of Ms. Toni. She greets the staff and guests with “Hola” and a contagious smile. Birthday potlucks have staff running to the kitchen to see what recipe Ms. Toni had decided to bless them with. She graciously allowed us to share her delicious cabbage soup, which our team had the pleasure of enjoying just yesterday. We hope you love it as much as we did!

Ingredients

  • 1 head of cabbage
  • 1 white onion (medium-sized)
  • 5 cloves of garlic
  • 1 leek stem (only use the white part of the leek stem)
  • 1 small stalk of celery (3 to 4 stems of celery)
  • 1L water
  • 1L chicken broth
  • 1 tsp black pepper
  • 1 tsp oregano
  • Salt to taste

Instructions

  1. Chop the cabbage into large-sized bites (the cabbage wilts quickly and will shrink to small bite-sized pieces once cooked)
  2. Soak the chopped cabbage in water to cleanse and hydrate
  3. While the cabbage is soaking, begin dicing the remaining vegetables (white onion, garlic cloves, leek stem, celery stalk) into bite-sized pieces
  4. Drain the cabbage
  5. Heat up a Dutch oven to medium heat and add 4 tbsp of cooking oil
  6. Once the oil is ready, add all the diced vegetables and sauté until onions are lightly caramelized
  7. Now, add the drained cabbage by small quantities at a time to ensure even mix
  8. Let the vegetables & cabbage cook and marry together for about 5 minutes
  9. Add 1L of water and 1L of chicken broth and stir
  10. Add seasonings (1 tsp black pepper, 1 tsp oregano, & salt to taste)
  11. Stir and let the soup cook for an additional 10 minutes
  12. Turn off the heat and enjoy!
